Ingredients

  • 2 Egg Whites
  • 1 1/2 cup Caster Sugar
  • 1 tsp Vanilla
  • 1 tsp Vinegar
  • 1 tsp Cornflour
  • 4 tbsp Boiling Water
For Wattle Seed Flavoured Cream
  • 30g Footeside Farm Roasted and Ground Wattle Seed
  • 300 ml Thickened Cream
  • 1 tbsp Sugar

Method

Mix all ingredients in a large bowl adding the boiling water last.

Beat until very think - if you hold the bowl upside down it will not move.  This will take approx 10 minutes.  Spread onto a baking paper on a baking sheet.  I make mine to the size of the plate and container I will use.

Bake for 10 minutes at 150C reduce heat to 120C for 1 hour and leave in the oven to cool.  Store in a airtight container before spreading with toppings.

Wattle Seed  Flavoured Cream

Soak 20-30g of Footeside Farm Wattle Seed in ΒΌ cup of cold water in a heat proof bowl.  Microwave for 1 minute to release the flavour.  Allow to cool until completely cold.   Fold into whipped cream with 2 tablespoons of sugar. 

Spread over the cooled pavlova.  Top with your choice of fresh fruits, grated chocolate, nuts etc.
