  • 6 eggs
  • 250ml sour cream
  • 250 ml pouring cream
  • 1/2 red capsicum, finely chopped
  • 1 tablespoon Footeside Farm Salt Bush
  • 1 cup spinach
  • 4 spring onions, finely sliced
  • 2 cups tasty cheese
Footeside Farm Bush Tomato (paprika can be substituted)
  • To taste cracked pepper
  • 1/4 cup olives, if you like them


Preheat oven to 180C.  Line a rectangle baking tin with baking paper.

Heat a large frying pan over medium heat.  Add the Spinach.  Heat only until the leaves wilt.  Allow to cool.

 In a large bowl lightly beat eggs until combined.  Add both the creams, bush tomato and cracked pepper, mix until smooth.

In the baking tin evenly arrange wilted leaves of the salt bush and spinach.  Sprinkle over the capsicum, spring onions and most of the cheese – leave some to sprinkle on top.

Carefully pour the egg and cream mixture into the tin. 

Sprinkle with remaining cheese.  Bake in a moderate oven until set approximately 40minutes.

This is really nice served with the Bush Tomato Onion Jam.
