  • 1 sheet Puff Pastry
  • 50g Footeside Farm Dehydrated Quandongs
  • 1 cup Water
  • 1/2 cup Sugar
  • 125g Butter
  • 1 tsp Vanilla
  • 3/4 cup Caster Sugar
  • 2 Eggs
  • 1 1/2 cup Self Raising Flour
  • 1/2 cup Milk


Lightly grease a 20cm round tin and place the pastry so it comes up the sides.  You will have to cut the high edges and stick them on to the low places - this wont show after cooking.  Trim around the top for a neat edge.

In a saucepan cook the Footeside Farm Quandongs with the water and sugar for approx 30 minutes.  Allow to cool while preparing the cake batter.

In a bowl beat the butter, vanilla and sugar until light and fluffy.  Beat in eggs one at a time until combined.  Stir in the sifted flour and milk to combine - don't over mix it.

Pour quandong mixture onto pastry base spreading evenly.  Spoon the cake batter on top covering the quandongs completely.

Bake in a moderate oven of 180 degrees C for 45 minutes or until cake is golden and firm to touch.

Ice or sprinkle with icing sugar.
