Ingredients
- 50g Footeside Farm Quandongs
- 2 cups Water
- 1/2 cup sugar
- 2 cups Self Raising Flour
- 1/2 cup Sugar
- 1 tsp Cinnamon
- 100g Butter or Margarine
- 2 Eggs
- 3/4 cup Milk
Method
In a saucepan gently cook the Footeside Farm Quandongs with ½ cup sugar and water for 30 minutes allow to cool.
In a bowl mix flour, cinnamon and sugar. Melt butter. Lightly beat eggs in milk. Add the milk and eggs to the flour and sugar then add butter. Mix to combine, don't over mix.
Place mixture in to 12 muffins cases. Into the top of each muffin add a spoonful of the quandong mixture. Make sure you place it well down in the mixture as it will rise around it.
