Ingredients
- 1 leg of lamb, boned
- 2 tablespoons Tomato Paste
- 1 tablespoon Footeside Farm Bush Tomato dried and ground
- 1 Tablespoon honey
- 1 tablespoon mustard
- 1/4 teaspoon salt, if desired
Method
Open the leg of lamb and cut it open just a little bit more (butterfly).
Mix the rest of the ingredients together including Footeside Farm Bush Tomato. Spread over the open lamb.
Bake in a Weber or an oven at 180°c for 1 ½ hrs or until cooked
