Ingredients
- 2 cups Self raising flour
- 2 tablespoons chopped parsley
- 2 tablespoons chopped chives
- 1 1/4 cups (600g uncooked) cooked diced pumkin
- 1 tablespoon Footeside Farm Bush Tomato dried and ground
- 1 egg
- 2 tablespoons milk
- 30g margarine melted
- salt and pepper to taste
Method
Mix dry ingredients together including Footeside Farm Bush Tomatoes dried and ground. Melt margarine and mix with milk and egg.
Add to dry ingredients. Stir in herbs and pumpkin. Don’t over mix.
Place in muffin tray and sprinkle over some Footeside Farm Bush Tomato.
Bake at 180C for 20 minutes.
